Black Bean Taquitos

Ingredients

The filling

  • 1 medium onion, diced
  • 2 15 oz cans black beans, drained and rinsed
  • 3 cloves garlic, minced
  • cup water
  • ½ cup salsa
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lime juice

The tortillas

  • 16 6-inch corn tortillas

Instructions

  1. Combine onion, black beans, garlic, water, salsa, chili powder, cumin, paprika, salt, and pepper in a saucepan and heat until bubbling.
  2. Reduce heat and simmer uncovered for 15 minutes until thickened, then stir in lime juice and mash half of the mixture.
  3. Preheat oven to 400°F and prepare a baking sheet with foil and cooking spray.
  4. Warm tortillas in batches in the microwave between damp paper towels.
  5. Scoop filling onto each tortilla, roll them up, and place back between damp paper towels.
  6. Arrange rolled taquitos seam side down on the baking sheet and mist with cooking spray.
  7. Bake for 15-18 minutes until crispy.
