Black Bean Taquitos

The tortillas
Instructions
- Combine onion, black beans, garlic, water, salsa, chili powder, cumin, paprika, salt, and pepper in a saucepan and heat until bubbling.
- Reduce heat and simmer uncovered for 15 minutes until thickened, then stir in lime juice and mash half of the mixture.
- Preheat oven to 400°F and prepare a baking sheet with foil and cooking spray.
- Warm tortillas in batches in the microwave between damp paper towels.
- Scoop filling onto each tortilla, roll them up, and place back between damp paper towels.
- Arrange rolled taquitos seam side down on the baking sheet and mist with cooking spray.
- Bake for 15-18 minutes until crispy.
