Spicy Beef Taquitos

Ingredients

The filling

  • 1 tbsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp oregano
  • ½ tsp paprika
  • 1 ½ tsp ground cumin
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 lb 95% lean ground beef
  • ½ cup salsa
  • 3 oz 50% reduced fat Pepper Jack cheese, shredded

The tortillas

  • 16 6-inch corn tortillas

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with foil and cooking spray.
  2. Mix together the chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and pepper to create taco seasoning.
  3. Cook the ground beef in a skillet over medium heat until browned, then drain any grease.
  4. Add the taco seasoning and salsa to the beef, stirring to combine, then mix in the shredded cheese.
  5. Warm half of the tortillas in the microwave until pliable, then fill each with beef mixture and roll them up.
  6. Place the rolled taquitos seam-side down on the baking sheet and mist the tops with cooking spray.
  7. Bake in the oven for about 15 minutes until golden and crispy.
