Ingredients

The filling

  • 2 Tablespoons Olive Oil
  • 1 Medium Yellow Onion, finely diced
  • 3 Cloves Garlic, mashed
  • 1 Pound Ground Beef
  • 3 Tablespoons Taco Seasoning
  • 1 4.5 Ounce Can Chopped Green Chilis
  • ½ Cup Cilantro, chopped
  • 1 Lime, juiced
  • Cups Shredded Mexican Cheese, divided

The tortillas

  • 8 6 Inch Corn Tortillas

For serving

  • Guacamole
  • Avocado Lime Crema

Instructions

  1. Preheat the oven to 400°F.
  2. Heat olive oil in a pan over medium heat, then sauté diced onion and garlic for 3-4 minutes.
  3. Add ground beef, taco seasoning, and green chilis, cooking until the beef is browned.
  4. Remove from heat and stir in chopped cilantro, shredded cheese, and lime juice until melted.
  5. Prepare tortillas by wrapping them in a damp paper towel and microwaving for 1 minute.
  6. Fill each tortilla with the beef mixture and top with remaining cheese, then close gently.
  7. Place tacos on a baking sheet and bake for 10 minutes.
  8. Turn on the broiler for an additional 2 minutes until crispy.
  9. Serve garnished with cilantro, guacamole, or avocado lime crema.
