Instructions
- Preheat the oven to 425°F.
- Prepare the shredded beef by slicing larger pieces into smaller chunks.
- Combine the green chilies, chipotle pepper, adobo sauce, garlic powder, coriander, cumin, chili powder, lime zest, and lime juice in a bowl.
- Mix the beef with the combined ingredients until well incorporated.
- Wrap about 10 tortillas in damp paper towels and microwave for 1 minute to soften.
- Take one tortilla at a time, add about 1 tablespoon of queso fresco and 1-2 tablespoons of the beef mixture, then roll it up.
- Place the rolled taquitos seam-side down on a lightly oiled baking sheet.
- Lightly spray or brush the tops with olive oil and sprinkle with kosher salt.
- Bake for 20-25 minutes until the edges are golden brown.
- Let cool for a few minutes before serving.
