Ingredients

The filling

  • 3 C cooked, shredded beef roast
  • 4 oz green chilies, undrained
  • ¼-½ t minced chipotle pepper in adobo sauce
  • 3 t adobo sauce from the canned chipotle peppers
  • 1 t garlic powder
  • 1 t coriander
  • ½ t cumin
  • 1 t chili powder
  • zest from one lime
  • 1 T fresh lime juice
  • 12 oz Queso Fresco

The tortillas

  • 20 6" white corn tortillas

For baking

  • olive oil or cooking spray
  • kosher salt

Instructions

  1. Preheat the oven to 425°F.
  2. Prepare the shredded beef by slicing larger pieces into smaller chunks.
  3. Combine the green chilies, chipotle pepper, adobo sauce, garlic powder, coriander, cumin, chili powder, lime zest, and lime juice in a bowl.
  4. Mix the beef with the combined ingredients until well incorporated.
  5. Wrap about 10 tortillas in damp paper towels and microwave for 1 minute to soften.
  6. Take one tortilla at a time, add about 1 tablespoon of queso fresco and 1-2 tablespoons of the beef mixture, then roll it up.
  7. Place the rolled taquitos seam-side down on a lightly oiled baking sheet.
  8. Lightly spray or brush the tops with olive oil and sprinkle with kosher salt.
  9. Bake for 20-25 minutes until the edges are golden brown.
  10. Let cool for a few minutes before serving.
