Ingredients

The filling

  • 1 recipe Shredded Beef Tacos (beef portion only)

The tortillas

  • 15 corn tortillas corn tortillas

The oil

  • a few tablespoons vegetable oil vegetable oil
  • a few tablespoons extra virgin olive oil extra virgin olive oil (optional)

Dipping options

  • to taste salsa
  • to taste guacamole
  • to taste sour cream
  • to taste cilantro lime ranch

Instructions

  1. Cook the shredded beef according to the recipe directions and drain well.
  2. Heat a non-stick griddle over medium-high heat and cook the tortillas for about 15-30 seconds on each side until soft.
  3. Stack the cooked tortillas on a plate and cover them to keep warm.
  4. Fill a non-stick saucepan with a mixture of vegetable oil and optional extra virgin olive oil, about ½ inch high.
  5. Heat the oil over medium heat.
  6. Take one tortilla, place about ¼ cup of shredded beef in the center, roll it up, and secure with a toothpick.
  7. Gently place the rolled taquitos into the hot oil, cooking until lightly browned on both sides.
  8. Remove the taquitos from the oil and place them on a paper towel-covered plate to drain.
  9. Serve warm with your choice of dipping sauces.
