Instructions
- Cook the shredded beef according to the recipe directions and drain well.
- Heat a non-stick griddle over medium-high heat and cook the tortillas for about 15-30 seconds on each side until soft.
- Stack the cooked tortillas on a plate and cover them to keep warm.
- Fill a non-stick saucepan with a mixture of vegetable oil and optional extra virgin olive oil, about ½ inch high.
- Heat the oil over medium heat.
- Take one tortilla, place about ¼ cup of shredded beef in the center, roll it up, and secure with a toothpick.
- Gently place the rolled taquitos into the hot oil, cooking until lightly browned on both sides.
- Remove the taquitos from the oil and place them on a paper towel-covered plate to drain.
- Serve warm with your choice of dipping sauces.
