Ingredients

The filling

  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cayenne pepper
  • ½ teaspoon ground paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • a pinch dried oregano
  • 2 tablespoons tomato paste
  • ½ cup beef broth

The taco shells

  • 12 pieces corn tortillas
  • ½ inch neutral, high-heat oil (for frying)

For serving

  • 1 cup shredded Mexican cheese or Colby Jack or Pepper Jack
  • 3 leaves lettuce of choice, thinly sliced
  • 1 cup pico de gallo
  • 1 cup sour cream
  • 1 cup guacamole
  • as needed lime wedges

Instructions

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add ground beef and spices, breaking up the meat and cooking until browned.
  3. Stir in tomato paste and beef broth, cooking until thickened.
  4. In a separate skillet, heat oil for frying taco shells.
  5. Fry corn tortillas until puffed and crispy, then drain on paper towels.
  6. Assemble tacos by filling shells with beef mixture and toppings.
