Ingredients

Filling

  • 1 Tbsp olive oil
  • 1 lb lean ground beef
  • to taste salt
  • to taste black pepper
  • 2 ½ tsp minced garlic
  • 2 ½ tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp onion powder
  • ½ cup tomato sauce
  • cup low-sodium chicken broth

Tacos

  • 8 pieces corn tortillas (5 - 6 inch)
  • ¾ cup cheddar cheese or shredded Mexican cheese blend
  • 2 pieces Roma tomatoes (or 1 cup grape tomatoes, diced)
  • 2 cups shredded romaine or iceberg lettuce

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add ground beef in chunks, season with salt and pepper, and brown for about 3 minutes.
  3. Flip and break up the beef, cooking until almost done, about 2 minutes.
  4. Add garlic, chili powder, cumin, and onion powder, cooking for about 1 minute.
  5. Pour in chicken broth and tomato sauce, then simmer until thickened, about 3-5 minutes.
  6. Serve the filling warm over warmed tortillas with toppings like lettuce, cheese, and tomatoes.
