Ingredients

Ground Beef Taco Mixture

  • 1 tablespoon avocado oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb. grass-fed ground beef
  • 14 oz. fire-roasted tomatoes with green chilis
  • 2 tablespoons cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons ancho chili powder
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup pinto beans, drained and rinsed
  • 1 tablespoon lime juice
  • ¼ cup cilantro

Mashed Avocado

  • 2 avocados mashed
  • 1 tablespoon lime juice
  • to taste salt

Tacos

  • 10–14 pieces corn tortillas
  • 1 cup shredded lettuce
  • to taste Pico de Gallo
  • optional shredded Mexican cheese
  • optional pickled onions
  • optional pickled jalapenos
  • optional sour cream

Instructions

  1. Heat a skillet to medium-high heat and add avocado oil and onions, sauté until translucent.
  2. Add garlic and sauté for another 30 seconds.
  3. Add ground beef and break it up, cooking until browned.
  4. Stir in fire-roasted tomatoes, spices, pinto beans, and lime juice; cook for a few minutes.
  5. Add cilantro, mix, and set aside.
  6. In a bowl, mash together avocados, lime juice, and salt.
  7. Toast corn tortillas, fill with beef mixture, and top with lettuce, pico de gallo, and mashed avocado.
