Instructions
- Heat a skillet to medium-high heat and add avocado oil and onions, sauté until translucent.
- Add garlic and sauté for another 30 seconds.
- Add ground beef and break it up, cooking until browned.
- Stir in fire-roasted tomatoes, spices, pinto beans, and lime juice; cook for a few minutes.
- Add cilantro, mix, and set aside.
- In a bowl, mash together avocados, lime juice, and salt.
- Toast corn tortillas, fill with beef mixture, and top with lettuce, pico de gallo, and mashed avocado.
