Ingredients

Taco Meat

  • 1 pound lean ground beef
  • 1 teaspoon fine sea salt
  • 1 15 oz. can lentils, drained and rinsed
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano

For Serving

  • 8 pieces tortillas
  • to taste chopped romaine lettuce
  • to taste salsa
  • to taste guacamole
  • to taste any other toppings

Instructions

  1. Brown the ground beef in a skillet over medium-high heat with 1 teaspoon of salt, breaking it up as it cooks for about 5 minutes.
  2. Add the drained lentils, cumin, chili powder, and oregano to the skillet, stirring well for 3 to 5 minutes until the lentils blend in with the meat.
  3. Adjust seasoning to taste, then serve the taco meat in tortillas or over greens, adding toppings as desired.
