Ingredients

The filling

  • 2 cups chicken, shredded or chopped
  • 2 ounces cream cheese, softened
  • 1 cup shredded cheese
  • ¼ cup salsa
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon salt, to taste

The taquitos

  • 10 whole whole-wheat flour tortillas
  • 1 tablespoon neutral oil (like avocado oil, light olive oil, or refined coconut oil)

Instructions

  1. Preheat the oven to 350ºF and place a wire rack on a baking sheet.
  2. In a medium bowl, combine the first seven ingredients and mix well.
  3. Soften the tortillas by wrapping them in a damp paper towel and microwaving in 15-second bursts until warm.
  4. Spoon about 2 rounded tablespoons of the chicken filling onto each tortilla, spreading it in a line shape and leaving space at the edges.
  5. Roll the tortillas tightly and place them seam-side down on the wire rack.
  6. Brush the taquitos generously with oil on all sides.
  7. Bake for 18-22 minutes or until browned and crispy.
  8. Remove from the oven and serve with avocado salsa.
