Cheesy Chicken Taquitos with Avocado Salsa

whole-wheat flour tortillas

neutral oil (like avocado oil, light olive oil, or refined coconut oil)
Instructions
- Preheat the oven to 350ºF and place a wire rack on a baking sheet.
- In a medium bowl, combine the first seven ingredients and mix well.
- Soften the tortillas by wrapping them in a damp paper towel and microwaving in 15-second bursts until warm.
- Spoon about 2 rounded tablespoons of the chicken filling onto each tortilla, spreading it in a line shape and leaving space at the edges.
- Roll the tortillas tightly and place them seam-side down on the wire rack.
- Brush the taquitos generously with oil on all sides.
- Bake for 18-22 minutes or until browned and crispy.
- Remove from the oven and serve with avocado salsa.
