Ingredients

The filling

  • 3 oz cream cheese
  • ¼ cup green salsa
  • 1 tablespoon fresh lime juice
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon onion powder
  • ¼ teaspoon granulated garlic or garlic powder
  • 3 tablespoons chopped cilantro
  • 2 tablespoons sliced green onions
  • 2 cups shredded cooked chicken
  • 1 cup grated pepper jack or plain jack cheese

For assembly

  • small size flour or corn tortillas
  • to taste kosher salt
  • to taste cooking spray or olive oil

Instructions

  1. Soften cream cheese in the microwave for 20-30 seconds.
  2. Mix in green salsa, lime juice, cumin, chili powder, onion powder, and granulated garlic.
  3. Stir in cilantro and green onions, then add chicken and cheese, mixing well.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with foil, greasing it lightly.
  5. Warm tortillas in the microwave wrapped in damp paper towels until soft.
  6. Place 2-3 tablespoons of the filling on the lower third of each tortilla and roll tightly.
  7. Arrange rolled taquitos seam-side down on the baking sheet, ensuring they do not touch.
  8. Spray or brush the tops with oil and sprinkle with kosher salt.
  9. Bake for 15-20 minutes or until crisp and golden brown.
  10. Let cool slightly before serving, optionally with sour cream or creamy lime-cilantro dressing.
