Chicken Taquitos

Ingredients

The filling

  • 3 cups shredded chicken
  • ½ cup cream cheese
  • 1 cup grated cheddar cheese
  • cup salsa
  • 2 fresh green onions, small diced
  • 2 teaspoons taco seasoning
  • 1 tablespoon minced cilantro
  • ½ tablespoon lemon juice
  • to taste salt and pepper

The tortillas

  • 12 to 15 8-inch tortillas
  • as needed vegetable oil, for brushing

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper and cooking spray.
  2. In a bowl, combine the shredded chicken, cream cheese, cheddar cheese, salsa, green onions, taco seasoning, cilantro, lemon juice, salt, and pepper. Mix until smooth.
  3. Place about 3 tablespoons of the chicken mixture on each tortilla, about 1 inch from the edge, and tightly roll them up, placing seam side down on the baking sheet.
  4. Brush the tops of the rolled tortillas with oil or spray with cooking spray.
  5. Bake for 15-20 minutes until the tortillas are lightly golden brown.
  6. Serve with guacamole, sour cream, salsa, or your favorite sauce.
