Ingredients

The filling

  • 1 tablespoon canola oil
  • 1 pound boneless, skinless chicken breasts
  • 1 cup Buffalo wing sauce
  • 2 oz 1/3 less fat cream cheese
  • ¼ cup light blue cheese dressing

The tortillas

  • 16 6-inch corn tortillas

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with foil and cooking spray.
  2. Heat canola oil in a skillet over medium-high heat and cook chicken breasts for 3 minutes on each side.
  3. Add Buffalo sauce to the skillet, bring to a bubble, then lower heat, cover, and simmer for 15-20 minutes until chicken is cooked through.
  4. Shred the chicken using two forks and mix it back into the sauce, cooking for an additional 3-5 minutes until thickened.
  5. Combine the shredded chicken with cream cheese and blue cheese dressing until well mixed.
  6. Warm half of the tortillas in the microwave until pliable, then fill each with 2 tablespoons of the chicken mixture and roll tightly.
  7. Place the rolled taquitos seam side down on the baking sheet and repeat with remaining tortillas and filling.
  8. Bake in the oven for about 15 minutes until golden and crispy.
