Ingredients

Taco Meat

  • 1 teaspoon oil
  • 15 ounce can black or pinto beans
  • 1 pound lean Ground Beef
  • 1 ½ tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ¾ teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)

Tacos

  • 8 8-inch corn tortillas or lower sodium whole wheat tortillas, toasted
  • ½ cup plain Greek yogurt
  • ¼ cup shredded cheddar cheese
  • 2 medium Roma tomatoes, sliced or diced
  • ½ cup shredded romaine lettuce

Instructions

  1. Heat oil in a large skillet to medium and sauté the beans for 2-3 minutes, mashing them with a fork.
  2. Transfer the mashed beans to a bowl and set aside.
  3. In the same skillet, add the ground beef and sauté for 6-8 minutes until cooked through, breaking it into small pieces.
  4. Stir in the taco seasoning ingredients and fold in the mashed beans.
  5. Serve the taco meat in toasted tortillas topped with cheddar cheese, Greek yogurt, tomatoes, and shredded lettuce.
