Easy Vegan Tacos with Refried Beans and Corn Salsa

Ingredients

Taco Fillings

  • 10 pieces corn tortillas
  • cups prepared vegetarian refried beans
  • cups shredded white cabbage
  • 20 pieces cherry tomatoes
  • 2 medium avocados

Garnish (optional)

  • 10 sprigs cilantro

Corn Salsa

  • 1 cup prepared mild salsa
  • 1 cup frozen corn

Instructions

  1. Warm tortillas in a hot skillet for 1-2 minutes.
  2. Fill each tortilla with ¼ cup refried beans, ¼ cup shredded cabbage, 4 cherry tomato halves, 2 slices of avocado, and garnish with cilantro if desired.
  3. Mix mild salsa with corn to prepare corn salsa.
  4. Serve each taco with 3 tablespoons of corn salsa.
