Kiwi Mojito Popsicles

Instructions
- Boil water and sugar in a saucepan, stirring constantly.
- Reduce heat and add mint leaves, simmer for 10-15 minutes, then strain the mixture.
- Blend the strained syrup with rum, lime juice, and 4 kiwis until smooth.
- Pour the mixture into Dixie cups and freeze for about an hour.
- Slice the remaining kiwis into thin coins and make a slit in each.
- Insert a popsicle stick into each kiwi slice and press onto the popsicles.
- Freeze until completely solid.
