Spicy Shrimp with Cauliflower Mash and Garlic Kale

Ingredients

Cauliflower Mash

  • 2 tablespoons olive oil
  • 1 head cauliflower, cut into small florets (about 6 cups)
  • 3 cloves garlic, minced
  • 1 cup milk
  • 3 cups vegetable or chicken broth
  • 1 14-ounce can white beans, rinsed and drained
  • ½ cup cornmeal
  • ½ cup shredded cheese, like sharp cheddar or havarti
  • 1 teaspoon salt

Kale

  • 1 tablespoon bacon fat (or olive oil)
  • 3 cups kalettes OR chopped kale
  • 3 cloves garlic, minced

Shrimp

  • 1 tablespoon olive oil
  • pounds shrimp (enough for 4 people)
  • a few good shakes garlic salt, chili powder, cayenne, and/or black pepper

Instructions

  1. Heat olive oil in a large pot, add cauliflower and garlic, and sauté until fragrant.
  2. Add milk and 2 cups of broth, simmer until cauliflower is soft.
  3. Add white beans and mash roughly, then stir in cornmeal and adjust consistency with remaining broth.
  4. Stir in cheese and season to taste.
  5. In a skillet, heat bacon fat, add greens and garlic, and sauté until softened.
  6. In the same skillet, add olive oil, pat shrimp dry, and season with spices.
  7. Cook shrimp for a few minutes, then add a splash of water or broth to create a sauce.
  8. Serve shrimp and kale over cauliflower mash.
