Keto Cauliflower Grits And Shrimp

Ingredients

The grits

  • 1 head Cauliflower (cut into florets)
  • 4 tbsp Danish Creamery Salted European Style Butter
  • 1 ¼ cup Heavy cream
  • ½ cup Cheddar cheese (shredded)
  • 1 tsp Sea salt

The shrimp

  • 6 slices Bacon
  • 12 oz Medium shrimp (peeled and deveined)
  • 1 tsp Cajun seasoning
  • 4 cloves Garlic (minced)
  • 1 medium Green onion (sliced thinly)

Instructions

  1. Finely chop cauliflower florets in a food processor until the texture resembles finer cauliflower rice.
  2. In a dutch oven, melt the butter over medium heat.
  3. Add heavy cream and cauliflower rice, bring to a gentle boil, then simmer until creamy and tender.
  4. Reduce heat, stir in salt and cheddar cheese until melted, then set aside.
  5. Cook bacon in a skillet over medium heat until crispy, then transfer to paper towels.
  6. Drain most bacon grease, leaving about 2 tablespoons in the skillet.
  7. Season shrimp with Cajun seasoning and add to the skillet with garlic, cooking until pink and opaque.
  8. Chop bacon and stir into the cauliflower grits, then serve shrimp over grits and garnish with green onions.
