Ingredients

The Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 2-3 tablespoons Cajun seasoning without salt
  • to taste none salt
  • 2 tablespoons ghee or butter

The Cauliflower Grits

  • 1 12-ounce bag frozen cauliflower
  • 1 large clove garlic, chopped
  • 2 tablespoons ghee or butter
  • to taste none salt

Instructions

  1. Boil water in a medium saucepan and steam the frozen cauliflower with chopped garlic until tender.
  2. Transfer the steamed cauliflower and garlic to a food processor, add ghee or butter, and blend until almost smooth.
  3. Season the shrimp generously with Cajun seasoning and salt.
  4. Heat ghee or butter in a large skillet over medium-high heat and cook the shrimp until pink and no longer translucent.
  5. Spoon the cauliflower 'grits' into bowls, top with shrimp, and drizzle with the ghee and Cajun seasoning sauce.
