Paleo Shrimp and Grits

The Cauliflower Grits

frozen cauliflower

Instructions
- Boil water in a medium saucepan and steam the frozen cauliflower with chopped garlic until tender.
- Transfer the steamed cauliflower and garlic to a food processor, add ghee or butter, and blend until almost smooth.
- Season the shrimp generously with Cajun seasoning and salt.
- Heat ghee or butter in a large skillet over medium-high heat and cook the shrimp until pink and no longer translucent.
- Spoon the cauliflower 'grits' into bowls, top with shrimp, and drizzle with the ghee and Cajun seasoning sauce.
