Instructions
- Steam cauliflower florets for 15 minutes.
- Remove cauliflower and drain, saving the steaming liquid.
- Blend cauliflower with garlic, salt, pepper, cayenne, and butter until textured.
- Mix in coconut milk, almond flour, and nutritional yeast, adjusting consistency with steaming liquid if needed.
- Pat shrimp dry and season with cajun seasoning and sea salt.
- Cook bacon in a skillet until browned, then add shallot and cook until translucent.
- Remove bacon and shallot from the skillet.
- Cook shrimp in the bacon fat until opaque, adding bacon, shallot, tomatoes, garlic, and lemon juice towards the end.
- Assemble by placing grits in bowls and topping with shrimp and bacon mixture, garnishing with green onions.
