Jalapeno Popper Hasselback Stuffed Chicken

Ingredients

The chicken

  • pounds skinless chicken breasts

The filling

  • 3 slices cooked and crumbled bacon
  • 2 oz cream cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup shredded mozzarella cheese
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh green onions, finely chopped
  • ½ – 1 whole jalapeno, finely chopped

Seasoning

  • to taste chicken rub or seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Soften the cream cheese in the microwave for 15-20 seconds.
  3. Mix the cream cheese, crumbled bacon, chopped jalapenos, mozzarella, ¼ cup of shredded cheddar, fresh lime juice, and green onions in a bowl.
  4. Season one side of each chicken breast, then flip them over.
  5. Make several horizontal slits into the chicken breasts, cutting about ⅔ of the way through.
  6. Stuff the cream cheese mixture into the slits of the chicken.
  7. Season the top of the chicken with seasoning, salt, and pepper.
  8. Bake for 15-20 minutes until the internal temperature reaches about 140°F.
  9. Add the remaining ¼ cup of shredded cheddar cheese on top and return to the oven.
  10. Bake for an additional 5-10 minutes until the chicken reaches an internal temperature of 165°F.
  11. Garnish with crumbled bacon and jalapenos if desired.
