Jalapeno Popper Hasselback Stuffed Chicken

Instructions
- Preheat the oven to 400°F.
- Soften the cream cheese in the microwave for 15-20 seconds.
- Mix the cream cheese, crumbled bacon, chopped jalapenos, mozzarella, ¼ cup of shredded cheddar, fresh lime juice, and green onions in a bowl.
- Season one side of each chicken breast, then flip them over.
- Make several horizontal slits into the chicken breasts, cutting about ⅔ of the way through.
- Stuff the cream cheese mixture into the slits of the chicken.
- Season the top of the chicken with seasoning, salt, and pepper.
- Bake for 15-20 minutes until the internal temperature reaches about 140°F.
- Add the remaining ¼ cup of shredded cheddar cheese on top and return to the oven.
- Bake for an additional 5-10 minutes until the chicken reaches an internal temperature of 165°F.
- Garnish with crumbled bacon and jalapenos if desired.
