Jalapeno Popper Chicken

Ingredients

The chicken

  • 6 pieces boneless skinless chicken breasts
  • 12 slices bacon

The filling

  • 6 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ¼ cup diced jalapeno peppers
  • ¼ teaspoon garlic powder
  • to taste salt
  • to taste pepper

For cooking

  • as needed cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a sheet pan with cooking spray.
  2. In a bowl, combine cream cheese, cheddar cheese, jalapenos, and garlic powder.
  3. Cut a deep pocket into each chicken breast without cutting all the way through.
  4. Fill the pocket of each chicken breast with the cream cheese mixture.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Wrap each chicken breast tightly with two slices of bacon and place on the sheet pan.
  7. Bake for 30 minutes or until the chicken is cooked through and the bacon is crisp.
  8. If needed, broil for 3-4 minutes to crisp the bacon further.
  9. Let the chicken rest for 5 minutes before slicing and serving.
