Buffalo Chicken Jalapeño Poppers

Ingredients

The filling

  • 1 cup cooked chicken breast, shredded
  • 8 ounces cream cheese, softened
  • ½ cup sharp cheddar cheese, shredded
  • ⅓-½ cup buffalo sauce
  • a pinch salt and pepper
  • 10 large jalapeños, halved and seeds removed

The topping

  • ¼ cup potato chips, crumbs
  • ¼ cup corn flake crumbs
  • 8 slices cooked bacon, crumbled
  • ½ cup blue cheese, crumbled
  • 4 green onions, chopped

Instructions

  1. Preheat the oven to 375°F and lightly grease a baking sheet.
  2. In a bowl, mix cream cheese, cheddar cheese, buffalo sauce, and pepper, then stir in the shredded chicken.
  3. In another bowl, combine potato chip crumbs, corn flake crumbs, and half of the crumbled bacon.
  4. Fill each jalapeño half with the chicken mixture and top with the chip and bacon mixture.
  5. Place the filled jalapeños on the baking sheet and bake for 15-20 minutes until the filling is melty and the topping is golden.
  6. Remove from the oven and sprinkle with remaining bacon, blue cheese, green onions, and drizzle with more buffalo sauce if desired. Serve immediately.
