Ingredients

The filling

  • 12 medium jalapeno peppers
  • 7 oz. cream cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 slices bacon
  • 2 ½ Tbsp finely chopped cilantro
  • 1 clove minced garlic
  • Salt to taste salt
  • Freshly ground black pepper to taste pepper

The topping

  • ½ cup panko bread crumbs
  • ¼ tsp chili powder
  • 2 tsp olive oil
  • 3 ½ Tbsp thinly sliced green onions
  • 2 slices bacon

Instructions

  1. Preheat the oven to 400 degrees.
  2. Wearing gloves, remove the seeds and ribs from the jalapeños.
  3. Place the peppers cut side up on a baking sheet.
  4. In a bowl, mix cream cheese, Monterey Jack cheese, 4 slices of chopped bacon, green onions, cilantro, garlic, salt, and pepper until combined.
  5. Stuff the jalapeno halves with the cheese mixture.
  6. In another bowl, mix panko, chili powder, salt, and olive oil until coated.
  7. Sprinkle the panko mixture over each stuffed pepper.
  8. Bake for 14 to 18 minutes until the peppers are tender and cheese is melted.
  9. Garnish with remaining bacon and green onions, then serve warm.
