Greek Style Meatballs

Ingredients

  • 1.3 lb ground veal or beef
  • ½ cup chopped kalamata olives
  • ½ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 large egg, slightly beaten
  • 2 tbsp chopped parsley
  • 2 tbsp chopped oregano
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp ground pepper

Instructions

  1. Combine all the ingredients in a large mixing bowl and knead until fully combined.
  2. Form into approximately 20 meatballs, about the size of a golf ball.
  3. Heat cooking fat in a large skillet over medium heat.
  4. Sear the meatballs in batches of 10 until golden, about 4-5 minutes each.
  5. Reserve the par-cooked meatballs in a shallow bowl while searing the rest.
  6. Once all meatballs are seared, return them to the skillet, lower the heat, and cook until fully cooked through, about 10 minutes.
  7. Serve hot and enjoy.
