Ingredients

Pumpkin Bread

  • ¼ cup water
  • cup flaxseed meal
  • ¾ cup buckwheat flour
  • ½ cup oat flour
  • ¼ cup tapioca flour
  • cup granulated sweetener of choice
  • 1 ¼ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp cloves
  • 1 cup 100% pumpkin puree
  • ½ cup milk of choice
  • ¼ cup water
  • cup coconut oil
  • 1 ½ tsp apple cider vinegar

Pumpkin Streusel

  • 1 ½ cups oats
  • ¼ cup 100% pumpkin puree
  • ¼ cup sticky sweetener like honey, agave, or maple syrup
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp cloves
  • ½ cup almonds
  • ½ cup pumpkin seeds
  • ¼ cup sunflower seeds

Instructions

  1. Preheat the oven to 325°F and prepare a 9"x5" loaf pan.
  2. In a small bowl, mix water and flaxseed meal and set aside.
  3. In a large bowl, combine buckwheat flour, oat flour, tapioca flour, sweetener, baking soda, salt, and spices.
  4. In another bowl, mix pumpkin puree, milk, water, coconut oil, and apple cider vinegar until smooth.
  5. Combine the wet ingredients with the dry ingredients and mix until fully incorporated.
  6. Pour the batter into the prepared loaf pan.
  7. For the streusel, mix all streusel ingredients until well combined.
  8. After 15 minutes of baking, remove the bread and add the streusel on top.
  9. Return to the oven and bake for an additional 30-35 minutes until done.
  10. Let the bread cool completely in the pan before slicing.
