Instructions
- Preheat the oven to 350°F and prepare a bread loaf pan with non-stick spray and parchment paper.
- In a large bowl, whisk together the eggs, coconut oil, and maple syrup.
- Add the pumpkin puree and vanilla extract to the wet mixture and set aside.
- In a separate bowl, combine the flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared baking dish.
- In a small bowl, mix the streusel ingredients until a crumble forms and sprinkle it over the batter.
- Bake for 45-50 minutes, or until a toothpick comes out clean from the center.
- Allow the bread to cool, then whisk the glaze ingredients and pour it over the loaf.
