Ingredients

The bread

  • 2 pieces eggs
  • ½ cup coconut oil
  • ½ cup maple syrup
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp pumpkin pie spice

The streusel

  • ½ cup all-purpose flour
  • ¼ cup coconut sugar
  • 1 tbsp pumpkin pie spice
  • 3 tbsp coconut oil

The glaze

  • cups powdered sugar
  • ½ tbsp pumpkin pie spice
  • 2-3 tbsp almond milk

Instructions

  1. Preheat the oven to 350°F and prepare a bread loaf pan with non-stick spray and parchment paper.
  2. In a large bowl, whisk together the eggs, coconut oil, and maple syrup.
  3. Add the pumpkin puree and vanilla extract to the wet mixture and set aside.
  4. In a separate bowl, combine the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into the prepared baking dish.
  7. In a small bowl, mix the streusel ingredients until a crumble forms and sprinkle it over the batter.
  8. Bake for 45-50 minutes, or until a toothpick comes out clean from the center.
  9. Allow the bread to cool, then whisk the glaze ingredients and pour it over the loaf.
