Instructions
- Preheat the oven to 325°F and prepare a 9"x5" loaf pan.
- Mix water and flaxseed meal in a small bowl and set aside.
- In a large bowl, combine buckwheat flour, oat flour, tapioca flour, sweetener, baking soda, salt, and spices.
- In another bowl, mix pumpkin puree, milk, water, coconut oil, and apple cider vinegar until smooth.
- Combine the wet ingredients and the flaxseed mixture with the dry ingredients, stirring until incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- For the streusel, mix all streusel ingredients until well combined.
- After 15 minutes of baking, add the streusel topping to the bread and return to the oven.
- Bake for an additional 30-35 minutes until the topping is darkened and a toothpick comes out with a little batter.
- Allow the bread to cool completely in the pan before slicing.
