Ingredients

The bread

  • 1 cup buckwheat flour
  • 2 teaspoons baking powder
  • 4 teaspoons pumpkin pie spice
  • ½ teaspoon fine sea salt
  • ¾ cup pumpkin puree
  • 3 large eggs
  • 1 cup maple syrup
  • ¼ cup melted coconut oil

Optional toppings

  • 3 tablespoons chocolate chips or chopped walnuts

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, combine the buckwheat flour, baking powder, pumpkin pie spice, and salt, mixing well.
  3. Add the pumpkin puree, eggs, maple syrup, and melted coconut oil to the dry ingredients and whisk until smooth.
  4. Grease a loaf pan and line with parchment paper.
  5. Pour the batter into the pan and smooth the top, adding optional toppings if desired.
  6. Bake for about 60 minutes until the top cracks and a toothpick comes out clean.
  7. Let the bread cool in the pan for at least 1 hour before slicing.
