Instructions
- Preheat the oven to 350ºF.
- In a large bowl, combine the buckwheat flour, baking powder, pumpkin pie spice, and salt, mixing well.
- Add the pumpkin puree, eggs, maple syrup, and melted coconut oil to the dry ingredients and whisk until smooth.
- Grease a loaf pan and line with parchment paper.
- Pour the batter into the pan and smooth the top, adding optional toppings if desired.
- Bake for about 60 minutes until the top cracks and a toothpick comes out clean.
- Let the bread cool in the pan for at least 1 hour before slicing.
