Ingredients

  • 3 ½ cups whole wheat flour
  • 2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 tsp ginger
  • ½ cup coconut oil
  • ½ cup mashed banana
  • 4 eggs
  • 1 ¼ cups maple syrup
  • 1 ¾ cups pumpkin puree

Instructions

  1. 1. Preheat the oven to 350°F and grease two 9x5 inch loaf pans.
  2. 2. In a small bowl, mix together the dry ingredients.
  3. 3. In a large bowl, mix the remaining wet ingredients.
  4. 4. Combine the dry ingredients with the wet ingredients and stir to combine.
  5. 5. Pour the batter into the prepared loaf pans and bake for about 50 minutes.
  6. 6. Check for doneness by inserting a toothpick; remove from oven when a few crumbs stick to it.
  7. 7. Cool the bread on a wire rack.
