Grill Tilapia (African Style)

Instructions
- Make diagonal cuts in the fish and season with salt, pepper, and lemon juice.
- Grind the dry spices using a coffee grinder.
- Chop the herbs and garlic, then blend them with oil/water until pureed.
- Combine the pureed mixture with the ground spices and mix thoroughly.
- Marinate the fish with the spice mixture and refrigerate for up to 24 hours.
- Preheat the grill and oil the grill basket before placing the fish on it.
- Grill the fish for 1-2 minutes on each side, then reduce heat and cover.
- Cook for a total of 4-5 minutes on each side until fully cooked.
- Check for doneness by ensuring the meat near the bone is cooked through.
- Serve with pepper sauce and grilled plantains.
