Grill Tilapia (African Style)

Ingredients

The fish

  • 1-2 pieces white fish (Sea bass, red snapper, or tilapia)
  • 1-2 pieces lemons
  • to taste Salt
  • to taste freshly ground black pepper

The spices and herbs

  • 2 teaspoons whole white pepper
  • 2 teaspoons whole black pepper
  • 1-2 pieces African Nutmeg (ehuru)
  • 7-10 cloves garlic
  • 2 teaspoons anise seeds
  • ½ inch ginger
  • 1 teaspoon paprika
  • 2 tablespoons chicken bouillon powder or cubes
  • ½ cup coarsely chopped basil
  • ¼ cup onions or ¼ medium onion

Instructions

  1. Make diagonal cuts in the fish and season with salt, pepper, and lemon juice.
  2. Grind the dry spices using a coffee grinder.
  3. Chop the herbs and garlic, then blend them with oil/water until pureed.
  4. Combine the pureed mixture with the ground spices and mix thoroughly.
  5. Marinate the fish with the spice mixture and refrigerate for up to 24 hours.
  6. Preheat the grill and oil the grill basket before placing the fish on it.
  7. Grill the fish for 1-2 minutes on each side, then reduce heat and cover.
  8. Cook for a total of 4-5 minutes on each side until fully cooked.
  9. Check for doneness by ensuring the meat near the bone is cooked through.
  10. Serve with pepper sauce and grilled plantains.
