Ingredients

The hens

  • 4 units Cornish hens

The seasoning

  • 1 tablespoon olive oil
  • 1 ½ tablespoons brown sugar or brown sweetener
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the smoker to 250 degrees.
  2. Pat the hens dry and remove any contents from the inner cavity.
  3. Drizzle the hens with olive oil.
  4. Sprinkle the spices over the hens and rub them into the skin.
  5. Place the hens on the smoker and smoke until they reach an internal temperature of 165 degrees.
  6. For crispy skin, increase the smoker temperature to 350 degrees when the internal temperature reaches 120-130 degrees.
  7. Use a meat thermometer to check the thickest part of the hen.
  8. Allow the hens to rest for 15-20 minutes before slicing.
