Instructions
- Preheat the smoker to 250 degrees.
- Pat the hens dry and remove any contents from the inner cavity.
- Drizzle the hens with olive oil.
- Sprinkle the spices over the hens and rub them into the skin.
- Place the hens on the smoker and smoke until they reach an internal temperature of 165 degrees.
- For crispy skin, increase the smoker temperature to 350 degrees when the internal temperature reaches 120-130 degrees.
- Use a meat thermometer to check the thickest part of the hen.
- Allow the hens to rest for 15-20 minutes before slicing.
