Ingredients

The corn

  • 4 ears grilled corn on the cob

The sauce

  • ¼ cup mayonnaise
  • 1 ½ teaspoons lime juice
  • ½ teaspoon chili powder
  • a pinch cayenne pepper (optional)
  • ¼ teaspoon kosher salt

The toppings

  • 2 ounces finely grated Cotija cheese
  • 2 tablespoons finely chopped cilantro

Instructions

  1. Grill the corn until cooked.
  2. Prepare the chili-mayo sauce by mixing mayonnaise, lime juice, chili powder, cayenne, and salt in a bowl.
  3. In another bowl, mix Cotija cheese and cilantro.
  4. Brush the mayonnaise mixture over each ear of corn.
  5. Sprinkle the Cotija and cilantro mixture over the corn, turning as needed.
  6. Finish with an additional sprinkle of chili powder and serve warm.
