Instructions
- Grill the corn until cooked.
- Prepare the chili-mayo sauce by mixing mayonnaise, lime juice, chili powder, cayenne, and salt in a bowl.
- In another bowl, mix Cotija cheese and cilantro.
- Brush the mayonnaise mixture over each ear of corn.
- Sprinkle the Cotija and cilantro mixture over the corn, turning as needed.
- Finish with an additional sprinkle of chili powder and serve warm.
