Instructions
- Mix mayonnaise, minced garlic, and the juice of ¼ lime in a small bowl and set aside.
- Spread cotija cheese on a plate and set aside.
- Brush the grill grate with vegetable oil and heat the grill to high.
- Grill the corn, turning occasionally until cooked and lightly charred, about 10 minutes.
- Immediately brush the corn with melted butter (if using), then with the garlic mayo.
- Roll the corn in cotija cheese until well coated.
- Sprinkle with chili powder, salt, and cilantro.
- Squeeze lime juice over the corn and serve immediately with extra lime wedges.
