Ingredients

The corn

  • 6 ears corn, shucked

The sauce

  • ¼ cup butter, melted (optional)
  • ½ cup mayonnaise
  • 2 cloves garlic, minced
  • ½ cup powdered style cotija cheese
  • 1 teaspoon chili powder
  • ½ cup cilantro, finely chopped
  • to taste kosher salt
  • 2 limes cut into wedges

Instructions

  1. Mix mayonnaise, minced garlic, and the juice of ¼ lime in a small bowl and set aside.
  2. Spread cotija cheese on a plate and set aside.
  3. Brush the grill grate with vegetable oil and heat the grill to high.
  4. Grill the corn, turning occasionally until cooked and lightly charred, about 10 minutes.
  5. Immediately brush the corn with melted butter (if using), then with the garlic mayo.
  6. Roll the corn in cotija cheese until well coated.
  7. Sprinkle with chili powder, salt, and cilantro.
  8. Squeeze lime juice over the corn and serve immediately with extra lime wedges.
