Instructions
- Preheat the grill to high heat or bring a large pot of water to a boil.
- Grill the corn for 2-3 minutes per side until charred, or boil for 4-5 minutes until tender.
- Remove the corn and let it cool slightly.
- In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and salt until smooth.
- Brush the mayo mixture onto each corn cob, covering all sides.
- Sprinkle each cob with cotija cheese, cilantro, and additional chili powder.
- Serve with lime wedges if desired.
