Elote (Mexican Street Corn)

Ingredients

The corn

  • 6 ears Corn

The sauce

  • ¼ cup Mayonnaise
  • 2 tbsp Sour cream
  • 1 tbsp Lime juice
  • 1 tsp Chili powder
  • ½ tsp Sea salt
  • 2 tbsp Cilantro (finely chopped)
  • ¾ cup Cotija cheese (crumbled)

For serving

  • as needed Lime wedges (optional)

Instructions

  1. Preheat the grill to high heat or bring a large pot of water to a boil.
  2. Grill the corn for 2-3 minutes per side until charred, or boil for 4-5 minutes until tender.
  3. Remove the corn and let it cool slightly.
  4. In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and salt until smooth.
  5. Brush the mayo mixture onto each corn cob, covering all sides.
  6. Sprinkle each cob with cotija cheese, cilantro, and additional chili powder.
  7. Serve with lime wedges if desired.
