Ingredients

The salad

  • 1 lb Ham (diced small, ~3 cups)
  • ½ cup Dill pickles (diced small)
  • ½ cup Sweet onion (diced small)
  • 1 ½ tbsp Fresh parsley (chopped)
  • 1 ½ tbsp Fresh thyme

The dressing

  • ¼ cup Mayonnaise
  • ¼ cup Greek yogurt
  • 1 tbsp Dijon mustard
  • tsp Cayenne pepper
  • Sea salt optional to taste
  • Black pepper optional to taste

Instructions

  1. Whisk together the mayo, Greek yogurt, Dijon mustard, and cayenne pepper in a small bowl to make the dressing.
  2. In a large bowl, combine the diced ham, pickles, onions, parsley, and thyme.
  3. Pour the dressing over the salad mixture and mix well. Season with sea salt and black pepper to taste if needed.
  4. Serve immediately, or refrigerate for at least 1 hour to let the flavors develop.
