Ham Salad

Instructions
- Chop the leftover ham into small pieces and place in a large bowl.
- Add the chopped hard-boiled eggs, onions, green onions, and celery to the bowl.
- In a smaller bowl, mix together the mayonnaise, mustard, Creole seasoning, and lemon juice; chill until ready to use.
- Combine the mayonnaise mixture with the ham and vegetable mixture, stirring until well coated.
- Adjust seasoning with salt and pepper as needed.
- Serve on toast or crackers.
