Ingredients

The salad

  • 1 pound ham, chopped
  • 1-2 hard-boiled eggs chopped
  • ¼ cup onion, minced
  • 1 green onion minced
  • ½ cup celery, minced

The dressing

  • ⅓-½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ lemon juiced
  • ½-1 teaspoon Creole Cajun seasoning
  • to taste salt and freshly ground pepper

Instructions

  1. Chop the leftover ham into small pieces and place in a large bowl.
  2. Add the chopped hard-boiled eggs, onions, green onions, and celery to the bowl.
  3. In a smaller bowl, mix together the mayonnaise, mustard, Creole seasoning, and lemon juice; chill until ready to use.
  4. Combine the mayonnaise mixture with the ham and vegetable mixture, stirring until well coated.
  5. Adjust seasoning with salt and pepper as needed.
  6. Serve on toast or crackers.
