American Tuna Open-Faced Tuna Salad Sandwich

Ingredients

The bread

  • 1 loaf olive bread
  • extra-virgin olive oil

The tuna salad

  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ large lemon (juice)
  • kosher salt
  • freshly ground black pepper
  • 1 6-ounce can American Tuna
  • ¼ cup finely diced red onion
  • ¼ cup chopped tarragon
  • 2 tablespoons capers
  • 1 tomato (thinly sliced)
  • 1 small bunch lettuce

Instructions

  1. Preheat the oven to 350ºF and slice the olive bread into four thin rounds.
  2. Drizzle the bread with olive oil and bake until golden brown, about 10 minutes, then let cool.
  3. Prepare the dressing by whisking together mayonnaise, mustard, and lemon juice, seasoning with salt and pepper.
  4. In a mixing bowl, combine tuna, onion, tarragon, and capers, then pour the dressing over and mix gently.
  5. Assemble the sandwiches by placing tomato slices on the bread, adding lettuce, and topping with tuna salad. Cut in half if desired and serve.
