Tuna Melt

The bread

bread of choice (sourdough recommended)

Colby Jack cheese (or cheese of choice)

unsalted butter, at room temperature
Instructions
- Prepare the tomato slices by placing them on paper towels and sprinkling with salt to release moisture.
- In a medium bowl, combine the celery, red onion, dill, tuna, lemon juice, Dijon mustard, mayonnaise, black pepper, and salt. Mix well.
- Butter two slices of bread and flip them over.
- Spread the tuna mixture on one slice of bread, top with tomato slices and cheese, then add the other slice of bread.
- Heat a pan over medium heat and place the sandwich in it.
- Cook until the bread is golden brown and the cheese is melted, about 2 to 3 minutes per side.
- Slice the sandwich in half and enjoy.
