Ultimate Tuna Melt

jar oil-packed tuna fillets or one and a half 5-oz. cans oil-packed tuna, drained

The bread and cheese

butter, room temperature

Pullman or sourdough bread

American cheese or sharp cheddar

kettle-style potato chips (preferably Cape Cod)

hot sauce (preferably Frank’s)
Instructions
- Combine the red onion, celery, mayonnaise, dill, capers or jalapeños, and lemon juice in a bowl.
- Add the drained tuna and mix, breaking it up with a fork. Season with pepper and adjust salt with brine if needed.
- Spread butter on one side of each slice of bread. Place cheese on the unbuttered side of half the slices, then top with the tuna mixture and close with the remaining bread slices, buttered side up.
- Heat a skillet over medium and cook the sandwiches, pressing down, until golden brown and the cheese is melted, about 4 minutes per side.
- Slice the sandwiches in half and serve with pickles and chips, adding hot sauce to taste.
