Ingredients

The tuna salad

  • 1 can solid white tuna in water, slightly drained
  • 2 tbsp light mayo
  • 3 tbsp finely chopped celery
  • 1 tbsp finely chopped red onion
  • 1 tsp red wine vinegar

The tomatoes

  • 2 ripe tomatoes, halved

The cheese

  • 4 slices Cheddar cheese, 2 ½ oz total

Instructions

  1. Preheat the broiler to high and adjust the rack to the second position from the top.
  2. Arrange the halved tomatoes on a baking tray and season with salt and pepper.
  3. In a small bowl, combine the tuna salad ingredients.
  4. Top each tomato half with ¼ cup of tuna salad and a slice of cheese.
  5. Broil the tomatoes until the cheese is melted, about 1 to 2 minutes.
  6. Remove from the oven and serve immediately.
