Sundried Tomato-Basil Tuna Salad

Ingredients

The marinade

  • 1 5-ounce can light tuna, drained
  • 1 tablespoon red wine vinegar
  • 1 tablespoon jarred marinara sauce
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon sun-dried tomatoes in oil, chopped
  • 1 pinch paprika
  • teaspoon freshly ground black pepper
  • 1 pinch salt
  • 2 tablespoons fresh basil, rolled and sliced thin

The salad and toppings

  • 2 cups lightly packed lettuce and herb mix
  • 2 tablespoons sliced, toasted almonds
  • 3 slices avocado
  • 2 tablespoons sliced olives of your choice

Instructions

  1. In a medium bowl, combine tuna, vinegar, marinara, olive oil, sun-dried tomatoes, paprika, black pepper, and salt.
  2. Fold in the sliced basil and chill the mixture for at least 30 minutes.
  3. Arrange the lettuce in salad bowls and place a large spoonful of the tuna salad in the center.
  4. Top the salad with toasted almonds, avocado slices, olives, and any remaining marinade.
