Ingredients

Pizza Dough

  • 2 cups all purpose flour
  • 1 ½ teaspoons yeast
  • 1 teaspoon sea salt
  • 1 ¼ cups warm water
  • 2 tablespoons extra virgin olive oil

Pizza Topping

  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon oregano
  • 2 oz Genoa salami cut into strips
  • 2 oz sopressata cut into strips
  • 4 oz Italian Blend cheese shredded
  • ¼ cup diced fresh tomatoes
  • ¼ cup shredded lettuce
  • to taste sea salt
  • to taste black pepper
  • 1 tablespoon extra virgin olive oil to drizzle after baking

Instructions

  1. Combine warm water, olive oil, and yeast in a mixer bowl and let it sit for a few minutes.
  2. Add flour and salt, then mix with a dough hook for about two minutes.
  3. Knead the dough on a floured surface until dry and elastic, then divide into two balls and let rest for at least four hours.
  4. Preheat the grill with a pizza stone inside.
  5. Flour the work area and flatten one dough ball into a 12-14 inch circle.
  6. Transfer the dough to a pizza peel sprinkled with cornmeal, brush with olive oil, and sprinkle with oregano, sea salt, and black pepper.
  7. Layer half of the salami and sopressata on the dough, followed by half of the cheese.
  8. Place the pizza on the hot stone in the grill and bake until browned and cooked through.
  9. Remove from the grill and top with shredded lettuce, diced tomatoes, remaining meats, and cheese.
  10. Sprinkle with oregano and drizzle with olive oil, then slice and serve.
