Giant Italian-Style Hoagie

Ingredients

The vegetables

  • 1 head iceberg lettuce
  • ½ small red onion
  • cups pickled peppadew or pepperoncini peppers
  • ¼ cup pickled pepper brine
  • 1 cup jarred mixed giardiniera

The sauce

  • cup mayonnaise
  • to taste kosher salt
  • to taste coarsely ground black pepper

The bread and meats

  • 1 16x4 inch loaf sesame bread or other Italian hoagie bread
  • lb thinly sliced cooked ham
  • lb thinly sliced mortadella
  • lb thinly sliced soppressata
  • lb sliced provolone

Instructions

  1. Prepare the vegetables by cutting the iceberg lettuce and slicing the red onion and pickled peppers.
  2. Drain and finely chop the jarred mixed giardiniera and mix it with mayonnaise, seasoning with salt.
  3. Prepare a large sheet of parchment paper and cut the bread in half lengthwise.
  4. Spread the giardiniera mayonnaise on the cut sides of the bread.
  5. Layer the meats and cheese on the bottom half of the bread.
  6. Add the onion and peppadew peppers on top of the meats and cheese.
  7. Top with shredded lettuce, packing it down.
  8. Drizzle pickled pepper brine over the lettuce and season with salt and pepper.
  9. Wrap the sandwich in parchment paper and cut it in half.
  10. Wrap the hoagie tightly in plastic wrap and cut into 4 sections.
