Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- Pulse the oats in a food processor until partially chopped and set aside.
- In a small bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and processed oats.
- In a medium bowl, whisk the melted butter with granulated and brown sugars until smooth.
- Add the egg yolk and vanilla to the butter mixture and mix well.
- Combine the dry ingredients with the wet ingredients until mixed.
- Drop rounded spoonfuls of dough onto the baking sheet, spacing them apart.
- Bake for 12-16 minutes depending on desired texture, then cool on the baking sheet.
- For icing, mix powdered sugar, vanilla, and enough milk for a drizzling consistency, then drizzle over cooled cookies.
