Ingredients

The cookies

  • ½ cup uncooked oats
  • ½ cup all-purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoon salt
  • 1 teaspoon cinnamon
  • teaspoon nutmeg
  • 4 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

The icing (optional)

  • cup powdered sugar
  • ¼ teaspoon vanilla extract
  • 1-2 teaspoons milk

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. Pulse the oats in a food processor until partially chopped and set aside.
  3. In a small bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and processed oats.
  4. In a medium bowl, whisk the melted butter with granulated and brown sugars until smooth.
  5. Add the egg yolk and vanilla to the butter mixture and mix well.
  6. Combine the dry ingredients with the wet ingredients until mixed.
  7. Drop rounded spoonfuls of dough onto the baking sheet, spacing them apart.
  8. Bake for 12-16 minutes depending on desired texture, then cool on the baking sheet.
  9. For icing, mix powdered sugar, vanilla, and enough milk for a drizzling consistency, then drizzle over cooled cookies.
