Instructions
- Preheat the oven to 350°F and prepare a baking sheet with nonstick spray.
- Pulse the rolled oats in a food processor until coarsely chopped and transfer to a bowl.
- Mix in the remaining dry ingredients and set aside.
- In a large bowl, cream together the butter, coconut oil, and brown sugar until smooth.
- Add the egg, molasses, and vanilla extract, mixing until combined.
- Gradually add the dry mixture to the wet mixture, mixing until fully combined.
- Use a 1.5 tablespoon cookie scoop to form cookies, flattening them slightly before placing on the baking sheet.
- Bake for about 12 minutes until cooked through, then transfer to a cooling rack.
- Prepare the icing by mixing powdered sugar with water until thick, then drizzle over the cooled cookies.
