Ingredients

Dry Ingredients

  • 1 cup rolled oats, lightly pulverized
  • ¾ cup white whole wheat flour
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • pinch salt

Wet Ingredients

  • ½ cup unsalted butter, room temperature
  • ¼ cup coconut oil, room temperature
  • 1 cup organic light brown sugar, packed
  • 1 large egg
  • 2 teaspoons molasses
  • 1 teaspoon vanilla extract

Icing

  • cup powdered sugar
  • 3 teaspoons water

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with nonstick spray.
  2. Pulse the rolled oats in a food processor until coarsely chopped and transfer to a bowl.
  3. Mix in the remaining dry ingredients and set aside.
  4. In a large bowl, cream together the butter, coconut oil, and brown sugar until smooth.
  5. Add the egg, molasses, and vanilla extract, mixing until combined.
  6. Gradually add the dry mixture to the wet mixture, mixing until fully combined.
  7. Use a 1.5 tablespoon cookie scoop to form cookies, flattening them slightly before placing on the baking sheet.
  8. Bake for about 12 minutes until cooked through, then transfer to a cooling rack.
  9. Prepare the icing by mixing powdered sugar with water until thick, then drizzle over the cooled cookies.
