Instructions
- Preheat the oven to 325°F and prepare two cookie sheets with parchment paper or grease them.
- In a mixing bowl, cream together the softened butter, coconut sugar, and cane sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Stir in the cinnamon, nutmeg, baking soda, baking powder, and salt until blended.
- Gradually add the oats, oat flour, and whole wheat flour, mixing until just combined.
- Scoop about 1 tablespoon of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 12 to 13 minutes until lightly golden brown, then cool on the pan before transferring.
