Spiced Oatmeal Cookies

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup packed coconut sugar
  • 2 tablespoons sugar (organic cane sugar)
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon ground Ceylon cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 ¾ cups old-fashioned oats
  • cup oat flour
  • cup white whole wheat flour or regular whole wheat flour

Instructions

  1. Preheat the oven to 325°F and prepare two cookie sheets with parchment paper or grease them.
  2. In a mixing bowl, cream together the softened butter, coconut sugar, and cane sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Stir in the cinnamon, nutmeg, baking soda, baking powder, and salt until blended.
  5. Gradually add the oats, oat flour, and whole wheat flour, mixing until just combined.
  6. Scoop about 1 tablespoon of dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 12 to 13 minutes until lightly golden brown, then cool on the pan before transferring.
