Ingredients

Dough

  • cups old-fashioned rolled oats
  • ¾ cup dark or light brown sugar
  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • ½ cup cold unsalted butter
  • 1 large egg yolk

Icing

  • 1 large egg white
  • cups powdered sugar
  • ¼ teaspoon pure vanilla extract
  • teaspoon kosher salt

Instructions

  1. Grind the oats into flour using a food processor.
  2. Add brown sugar, flour, salt, baking soda, baking powder, cinnamon, and nutmeg to the processor and blend briefly.
  3. Incorporate the butter and process until the mixture clumps together.
  4. Add the egg yolk and pulse until the dough is uniform.
  5. Shape the dough into a log, wrap it in plastic, and chill for 3 hours.
  6. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  7. Slice the chilled dough into rounds and place them on the baking sheets.
  8. Bake the cookies for about 12 minutes until golden and firm on the edges.
  9. Cool the cookies on a wire rack until crisp.
  10. Prepare the icing by mixing egg white, powdered sugar, vanilla, and salt until smooth.
  11. Lightly dip the tops of the cookies into the icing and let them dry completely.
