Instructions
- Grind the oats into flour using a food processor.
- Add brown sugar, flour, salt, baking soda, baking powder, cinnamon, and nutmeg to the processor and blend briefly.
- Incorporate the butter and process until the mixture clumps together.
- Add the egg yolk and pulse until the dough is uniform.
- Shape the dough into a log, wrap it in plastic, and chill for 3 hours.
- Preheat the oven to 350°F and prepare baking sheets with parchment paper.
- Slice the chilled dough into rounds and place them on the baking sheets.
- Bake the cookies for about 12 minutes until golden and firm on the edges.
- Cool the cookies on a wire rack until crisp.
- Prepare the icing by mixing egg white, powdered sugar, vanilla, and salt until smooth.
- Lightly dip the tops of the cookies into the icing and let them dry completely.
