Instructions
- Pulse the oats in a food processor until you have a variety of texture.
- Whisk the pulsed oats, flour, baking soda, salt, cinnamon, and nutmeg together in a bowl.
- Beat the butter, brown sugar, and granulated sugar until creamed, then add eggs, molasses, and vanilla extract.
- Combine the dry ingredients with the wet ingredients and mix until combined, then chill the dough for at least 45 minutes.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Scoop cookie dough onto the baking sheets and bake for 11-12 minutes until lightly browned.
- Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack.
- For the icing, mix confectioners’ sugar, vanilla extract, and milk until thick, then dip the tops of the cookies into the icing.
