Ingredients

The cookies

  • 2 cups old-fashioned whole rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 Tablespoon unsulphured or dark molasses
  • 2 teaspoons pure vanilla extract

The icing

  • cups sifted confectioners’ sugar
  • ¼ teaspoon pure vanilla extract
  • 1½–2 Tablespoons milk

Instructions

  1. Pulse the oats in a food processor until you have a variety of texture.
  2. Whisk the pulsed oats, flour, baking soda, salt, cinnamon, and nutmeg together in a bowl.
  3. Beat the butter, brown sugar, and granulated sugar until creamed, then add eggs, molasses, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients and mix until combined, then chill the dough for at least 45 minutes.
  5. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  6. Scoop cookie dough onto the baking sheets and bake for 11-12 minutes until lightly browned.
  7. Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack.
  8. For the icing, mix confectioners’ sugar, vanilla extract, and milk until thick, then dip the tops of the cookies into the icing.
