Low-Carb Paleo Bagels

Ingredients

The bagel mixture

  • cups blanched almond flour
  • ¼ cup golden flaxmeal
  • 1 tablespoon coconut flour
  • 1 teaspoon baking soda
  • ¼ teaspoon celtic sea salt
  • 5 large eggs
  • 2 tablespoons apple cider vinegar

Toppings

  • 1 tablespoon poppy seeds (optional)

Instructions

  1. 1. Grease a donut mold with coconut oil and dust with coconut flour.
  2. 2. In a food processor, pulse together the almond flour, flax meal, coconut flour, baking soda, and salt.
  3. 3. Add the eggs and vinegar to the mixture and pulse until thoroughly combined.
  4. 4. Transfer the batter to a resealable plastic bag, snip off one corner, and pipe the batter into the prepared mold.
  5. 5. Sprinkle the bagels with poppy seeds if desired.
  6. 6. Bake in a preheated oven at 350°F for 20-25 minutes until a knife inserted into the center comes out clean.
  7. 7. Let the bagels cool in the pan for 1 hour before serving.
